I don't now whether there is any riding available right from The Strip itself (I'm pretty sure there isn't), but I've made several trips to Vegas to ride in the areas which surround the city. There are two main options that I know of:
(1) Cottonwood Valley / Redrock / Blue Diamond -- an area about 15 miles straight west of town that is crisscrossed with beautiful and for the most part smooth desert singletrack. Fun, fun, fun. Head out Hwy 160 to one of the parking lots you encounter before climbing through the mountain pass.
(2) Boulder City -- a network of trails about 20 miles southeast of town (near Hoover Dam) which contains a so-so array of XC trails (based on what I rode) and a downright AWESOME array of DH trails. It's easy to find. Just go to Boulder City (Perhaps there is bus service or you could take one of the tour busses headed to Hoover Dam), turn left (north) at the Taco Bell and follow the signs up around the pit mine. These signs read "Bootleg Canyon Biking".
Escape Adventures runs a guide service out there, and I believe that they will also shuttle you to trailheads from town. I've talked to Jared there many times and he seems pretty sympathetic to the "stuck on The Strip" predicament. Escape's number is (702) 838-6968.
Also, if you can find anyone to get you up there, Gooseberry Mesa (two hours northeast of Vegas in southwestern Utah) is an experience you will never forget!

Not only can you hit about 35 miles an hour inside it, but when the big burley guys with walkie-talkies start chasing you, you'll get the added "adreneline comp" as you escape down and out to Industrial Ave.
Seriously, If you can hook up with a car, there is some first-rate desert riding beyond Boulder City and just across the Arizona state line on Hwy 93...just beyond the Lake Meade NRA. You can also hit the Valley of Fire or Red Rocks north of town.
Oh yeah, take fifteen minutes and ride the rollercoaster on top of the Stratoshpere.
