I'm planning a trip to Sedona in May with my wife. She doesn't ride, so I'd like to stay in a nice place with stuff for her to do while I'm out riding. Anyone have any recommendations for hotels or B&Bs?

Wildflower Inn and Bell Rock Inn are both very close to the Bell Rock trailheads. You'll have to drive her to hiking trailheads or into Sedona proper if she wants to do a pink jeep tour.

Try "A Touch of the Southwest". They have rooms and suites as well as a B&B. They are in uptown Sedona. Walking and riding distance of several trails. They are located a couple of blocks away from the main shopping area, so it is an easy walk to food and drink without being right in the middle of it.
