Road brakes v-brake leversJasper

I have inherited a road bike frame that will be turned into a monster. I would like to know if I can use road bike brakes with v-brake levers? I plan on changing the stem adding a riser bar adding a MTB rear drive train and making some grip shifts run the whole thing. Just to make it MTB like I am going to run the biggest tires that will fit in the frame. I know it will cost a couple of bucks but it is the kind of project I have been thinking about for a couple years and it will fool the wife into letting me upgrade one bike to build another.

V levers have less mechanical advantage than road levers so it will take more lever effort to use the road brakes

road frames aren't always friendly to the treatment you would expect a mtb to be able to handle. ie... you may bend, stretch, or break something.
