So Can anyone tell me what this oft' quoted feel is.... compared to cable?

To me at least, Hydraulic = Snappy feel at the lever. Quick action with honestly not enough modulation for me (Hayes Mags). I'm an Avid Mech + SD lever user myself.

Alternatively, I can see how someone could like the snappy-ness of the hydraulics and think my setup was too spongy..

I'm an AVID BB man myself too and have seen a lot o' posts talkin' 'bout Hydrolicks feel, just wondered what the difference was.

Interesting that you think that the cable had the spongier feel, I imagined that it would be the Hidrolix.....

My Avid mechs are anything but mushy. My Juicys are not "snappy" and lack modulation. I think the lever action really depends on the particular brake and setup.

From a modulation standpoint, the Juicys match my mechs very closely. In other words, it takes similar amount of lever pressure to generate a given amount of brake force, and when I increase lever pressure, the lever moves (by flexing, housing compresses/expands, caliper flexes,pads push further against the rotor, whatever...) a similar amount.

What feels quite different to me, is the return spring tension. I have my mech caliper arm return spring adjusted out most of the way, but it still feels like I am fighting more spring tension to actuate the mech. This is not cable drag, just return spring tension. My levers are very "snappy" in that way to me. The Juicys have a very light lever pull, and the return spring is also subtle.

As far as how they feel once the lever is pulled and the brake pads are engaged against the rotor... well, they feel pretty much the same.

That's my take.
