As you get away into the rural areas, though, the roads are awesome. As you go south you quickly come into the famed region of Andalucia, which has a great network of extremely quiet roads, mostly "sealed" (paved). Very hilly so it should be a fun challenge, and the people are very friendly, though no one speaks English.
Two years ago my wife and I were in Spain on our honeymoon. We didn't bike, but we did rent a car out of Sevilla and take it to Portugal, as well as closer destinations like Cordoba and some of the Andalucian towns. The rural roads between Sevilla and (if memory serves) Arcos de la Frontera, the closest major town in Andalucia, would up and down and all over the place and looked like they'd be fantastic for riding.
Get a good Michelin map (the more detailed ones show EVERY road) and you should be OK. Be forewarned - signposts at junctions often show the TOWN that is reached by each road but not the road numbers! Bring a compass and sense of direction too. Have a great time!
