How to tell if Chain is too long??mtbiac

I have a 2001 Giant AC Air and i think the Chain may be too long. Here is my reasoning. When i pedal hard (climbing/sprinting) i get this weird "pop" noise and the chain feels like its skipping, but isnt. Second, When in wither the 2nd or 1st largest Cassete rings, if i pedal backwards the chain will come off and roll down the cassete (weird). Also, i get what i think is excessive rear der. slap when i go over bumps, but i have a lizard skin so its not the chain, and doesnt sound like chain slap.

Any suggestions would be great. If chain is OK, what is the problem?? I have an XTR rer der, everything else is XT including cranks, etc. Bike is like 1 week old
