I haven't had any experience with clipless yet, but am wanting to get some good ones to start with.

You should also consider CB Egg Beater pedals. I'm riding these at the moment and they rock. Plus you get a two year warranty as opposed to Shimano's one year.
I haven't ridden either the 959s or Atac. I've ridden the 858 and felt fine, but this was in dry conditions. Not sure how they take mud personally.
Egg Beaters have a similar spring retention as the Atacs. Check out EB reviews.
The Time's are the easiest to use since there are really noarch

adjustments to be made other than the mounting of the cleats. Haven't had any experience with the Shimanos. But it's pretty much understood that if you ride in mud, nothing can beat the Time's. They just never jam up...

If you follow this board you will see a bunch of people going from Shimano to Time or Eggbeaters and not too much the other way (someone will post a follow up just to "prove" me wrong).
Times are a great pedal in the mud. They have a good sized platform and very predictable clip in and release. That's pretty much all you can ask of a pedal. Time ATACs are also pretty much bullet proof.
One note on the carbon ATACs - don't. They are not worth the price upgrade from the Alum version. For twice the price you save less than an ounce (Alum 416gr vs. CF 396gr or 356gr for the ti's $200+). Also, the Alum is indestructible. The carbons' have a nasty tendency to lose the plastic platform inserts - this does not effect performance but looks like crap and sucks from a $130 pedal. I have CF's on my FS and Alums on HT - if I ever destroy the CF's completely I will replace them with Alums.
I just saw Alums for $69 at JensonUSA.com - pretty hard to beat.
A lot of people seem to be very happy with the new Eggbeaters - My only reservation there would be the complete lack of a platform.

comes into contact with the platform of the Time pedal(it hits and rests on the two metal bars) that part of the pedal comparison is moot when it comes to a place for the foot to rest. What the "platform" of the Time does do is in combination with the ramped part it helps protect the metal bars from coming in contact with trail detritus.
Yeah, that would be my issue with the eggbeaters....arch

I thought the issue with Aliums was the crummy bushing (vs. bearing in other models)? Anyway I got my new 2002 composites for $69.

I've not used Eggbeaters, but I think the Time platform thing is for real. I use Sidi shoes and the shoes lugs seem to rest perfectly on the side of the pedal, and I get none of the "rocking" that some complain about. As far as I can tell, there would be nothing for the shoes lugs to rest on with Eggbeaters. Whatever......

I've been riding them for a while and I'm very satisfied with them. I ride in all types on terrains and conditions. I know there is a definite following of the times, particularly in muddy regions.
