I listed them in order of my preference, but all meet your requirements of I-70 close and doable in 2-3 hours. Son of Middle Creek might be a bit short, but you can easily add some North Trail onto it or Buffehr Creek to increase your saddle time. Obviously, ignore the poster below as Winter Park does not fit within the "I-70 close" or "on the way back to Denver from Steamboat" criteria.
