I'm going to be returning to Steamboat Springs from Denver one day next week, and I'm looking for recommendations for a trail in the Vail area that's easily accessible from I-70 and doable in 2-3 hours, i.e. 10-15 miles, preferably singletrack.

maybe go through winter park and do a ride there..

Go to the trail reviews section of this site... Directions to all four trails listed above are in the descriptions. I listed them in order of my preference, but all meet your requirements of I-70 close and doable in 2-3 hours. Son of Middle Creek might be a bit short, but you can easily add some North Trail onto it or Buffehr Creek to increase your saddle time. Obviously, ignore the poster below as Winter Park does not fit within the "I-70 close" or "on the way back to Denver from Steamboat" criteria.
