I currently have a 120mm X 10 deg stem. I ride in a stretched out position with my ass on the back of the saddle. The result is pain in my upper back and wrists after about an hour of riding. I moved the seatpost up and down and switched to a lowrise bar to lift my arms. That helped a little. I am going to try running a 90 to 100mm X 15 or 20 deg stem. Also, I have an Aheadset headset. My question is I saw some stems from different manufacturers called "aheadset" stems. Are these special stems only compatible with Aheadsets or are all stems compatible with all headsets?

aheadset has sort of become the generic term for threadless stems and headsets, kinda like Kleenex and Thermos. As long as it's for the same size steerer that you have (1", 1 1/8", 1 1/4") they're all the same.
