A shorter stem will steer a little quicker and handle better in technical terrain. It will be better on steep descents, allowing you to get further back on your bike, but the opposite is true on the climbs. You will have to concentrate more on weighting the front wheel on steep climbs. I recently went to 90 - 100mm stems from 120mm and find that my climbing hasn't suffered. Borrow a shorter stem or by a cheap one to try it out.
