Thinking of replacing my big ring with a Bash Ring.

What's the best way to "lockout" the front derailleur so that an accidental shift to the bash ring doesnt occur?

Im a newbie so if you could "dumb-up" your relies as much as possible, I would really appreciate it.

FDs have limit screws. Dial it in so it wont go past the middle ring.

Also, you do not need to change the FD height (ie get it close to the bashring). Just leave it where it is, and adjust the limit screw.

Will I have to mess around with the indexing at all?

If I adjust the H limit to max out at the middle, will I still have 1 click to shift from the granny to the middle?

You can still shift from granny to middle ring with one click. YOu just won't be able to click again to move any further.
