The wire is stainless, either gauge works fine. I wrap each end with a double loop. Do not use baling wire, it'll rust in time and eventually break...pokey, ow.
It works good and is cheap, however...Annihilation Principle

If you're gonna go to that trouble, I'd really recommend ODI lock grips. I use them on all my bikes, and by far, they're less of a pain in the ass.

If you use safety wire, make sure you poke the end down into the grip so you don't stab yourself in the hand.

It's cheap. Really, basically bailing type wire stuff. You can buy spools of safety wire and a nice twister plier thing at a good dirtbike shop for like 25 bucks or so I think. I haven't purchased it in a while do to the advent of locking grips so I really don't know.

As far as installing it, put a wrap around each end of the grip a little bit in. Most mountain bike grips don't have safety wire grooves as opposed to moto grips which do.

So there you go,

I use Zip ties...pimpbot

... with success. I just loop a Zip tie around each end of the grip to keep water out. Works well. I just use medium zip ties and crank them on with all I got, then I cut the end off with good telecom mini wire cutters right up against the ratchet nub.

Just be sure to wrap them so the little nub ends up where you hand and thumb are not.
