have a look at the weight-weenies site to find out about weights of various parts:
http://weightweenies.starbike.com/

here`s what you could do:

Handlebar-Easton CT2
Seatpost- Thompson Elite......CT-2 or Extralite (both around 190g)
Headset- Cane Creek C-2.......Extralite "the head" 64g will save about 40g
Pedals-Eggbeaters
Grips-Ritchey..........Bontrager foam 18g/pair
Shifters- Xt Rapid Rise.............remove gear display -23g
Rear Front dearaileurs-XT
Crankset-XT.................Al chainring bolts -20g.when rings are worn:Sugino supershifter rings -40g.a lightweight crankset with Sugino rings and Al-bolts weighs around 560g (Race-Face,Tune...)
Cassette-XT 9 Speed..........Al lockring -10g
Tires.Michelin Comp S............Continental Explorer Supersonic (440g) /Twister Supersonic (330g)
Brakes-Avid SD Mags................Ti+Al bolts -30g
Wheelset-XT Hubes, 517 Rims Wheelsmith Spokes..........only light part are the rims!get a new wheelset (Hügi 240 or CK hubs) and save at least 300g.
Tubes-Salsa..........Maxxis Flyweights (90g each) but you`ll suffer with flats.get Stans or ECLIPSE-Tubelesskit.
Saddle-Selle Italia Prolink..............if it`s the carbon it weighs 320g!the gel is 360g!!!get a SLR (140g),TT (165g) or even AX-Lightness (from 68g)
Bottom Bracket-XT..........255g.you`re stuck with XT.
Fork-Manitou Mars Elite
Stem-Thompson Elite...........about 201g-heavy!!have a look at a post above yours on different stem weights!Ritchey WCS 120mm weighs 142g.

you forgot:
-skewers: typical steel skewers weigh 130g........Ti-skewers are about 85g,steel bolt-on axles weigh 65g
-brake levers: XT are 160g...............Proshift 120g,FRM 117g,Kookas 95g (but flex..)
-cables: a typical set weighs around 150g..........Gore ultralights or Nokon Trac pearls (Al) will save around 20-30g.lightest would be Tune Plastic housing but you can`t get them in the US (would save around 50g)

finally there are all the different sorts of bolts:

the only place you need the added strenght of Titanium is at the stem and seatpost.all other bolts can be out of aluminum which is also a lot cheaper than Ti.

Aluminum (savings over steel):
Chainring bolts (2x5pcs) -30g / (2x4 pcs) –24g
Crank fixing bolts -15g
F-derailer (2 main bolts) -5g
R-derailer (hanger bolt,cable stop bolt,pulley wheel bolts) -ca.10g
A-head cap bolt (M6x20mm) -4g
Bottlecage bolts (4 pcs M5x10mm) –7g ( Al =3g /Ti =6g /Steel =10g)
Brake lever bolts –5g
V-Brake canti bolts (4 pcs M6x15mm) –11g
V-Brake cable fixing bolts (2 pcs M5 or M6x8mm) –5g
V-Brake brakepad fixing nuts (4 pcs M6) –10g
Cassette Lockring –10g (steel 14g / Al 4g)
Pedals ? -10g (my Corratecs had 8 steel bolts)

TITANIUM (savings over steel):
Chainring bolts (2x5 pcs) -15g / (2x4 pcs) –12g
Crank fixing bolts -10g
F-derailer (2 main bolts) –2g
R-derailer (hanger bolt,cable stop bolt) –4g
A-head cap bolt (M6x20mm) -2g
Bottlecage bolts (4 pcs M5x10mm) -4g
Seatpost clamp bolt –3g
Brake lever bolts –3g
Pedal axles –70g
Canti brake bosses on frame (2 pcs.) : -8g (typical steel bosses weigh around 24g)
Canti brake bosses on fork (2 pcs) -6g (Manitou Ti: 12g/Rock-shox SID steel :18g / Manitou steel : 21g)
Stem (4-6 pcs) 5-10g
Seatpost (1-2pcs) ca. 3-8g
V-Brake canti bolts (4 pcs M6x15mm) –6g
V-Brake cable fixing bolts (2 pcs M5 or M6x8mm) –3g
V-Brake brakepad carrier bolts (4pcs) -8g (Ti=12g / steel = 20g)
Ti bolt-on axles instead of QR -70g (typical steel QR levers 120g .bolt-on axles Ti= 48g / steel 65g)

Carbon (savings over aluminum):
A-head spacer -6g /10mm ( Al =10g/10mm / Carbon = 4g/10mm)

V-BRAKE TUNING:
4 Canti-bolts M6x15mm : steel 16g / Ti 10g / Al 5g...................-11g (Al)
4 padcarrier bolts: steel 20g / Ti 12g..............................................-8g (Ti)
4 pad fixing nuts M6 : steel 14g / Ti 9g / Al 4g.............................-10g (Al)
2 Cable fixing bolts M6x8mm (Avid) : steel 8g / Ti 5g / Al 3g.....-5g (Al)

Total possible savings : -34g

Example for maximum possible BOLT-TUNING on a MTB:
ALUMINIUM:
Chainring bolts (2x5pcs) -30g / (2x4 pcs) –24g
Crank fixing bolts -15g
F-derailer (2 main bolts) -5g
R-derailer (hanger bolt,cable stop bolt,pulley wheel bolts) -ca.10g
A-head cap bolt (M6x20mm) -4g
Bottlecage bolts (4 pcs M5x10mm) –7g ( Al =3g /Ti =6g /Steel =10g)
Brake lever bolts –5g
V-Brake canti bolts (4 pcs M6x15mm) –11g
V-Brake cable fixing bolts (2 pcs M5 or M6x8mm) –5g
V-Brake brakepad fixing nuts (4 pcs M6) –10g
Cassette Lockring –10g (steel 14g / Al 4g)

TITANIUM:
Seatpost clamp bolt –3g
Canti brake bosses on frame (2 pcs.) : -8g
Canti brake bosses on fork (2 pcs) -6g
V-Brake brakepad carrier bolts (4pcs) -8g
Stem (4-6 pcs) 5-10g
Seatpost (1-2pcs) ca. 3-8g

Total possible savings: ca. 150g

remember:
Titanium is about 1/3 lighter than steel
Aluminum is 1/3 the weight of steel and 1/2 the weight of Titanium
Carbon is about 1/2 the weight of aluminum
