Modified trials bike gearing on aGT Hans Rey replica

I'm running a 24 x 18t right now

I'm changing down to 16t in the back, but I'm wondering what other people use.

common gearing is an 18t front and 12t or 13t on the back. I'm guessing you are using the stock GT mod cranks that did not have a thread on freewheel so you are stuck with the front cog that you have.

Running a 16t on the back will give you the same gearing ratio as the more common 18/12 so you should be fine with that.
