Hybrid upgrade or new bike?OokieCookie

So Ive got a Trek 730 with only a couple thousand miles on it despite its age (7 or so yrs- spent alot of time in storage). Ive just moved to southern california and am checking out the bike scene here. I generally prefer road biking, but Orange County, from what I can tell so far, kind of chows ass in terms of roading it, what with the traffic and the apparent 6-lane minimum on just about any road. Actually its not so much the traffic as it is the traffic lights- the constant stop and go. Ive found a couple of decent long roads to ride on, but Ive recently checked out a couple mtn bike trails with the aforementioned hybrid and really like what I saw (sand and hardpack as opposed to mud and roots in Upstate NY). So basically Im looking into doing some mtn biking on a fairly regular basis. Being a grad student Im pretty hard up on cash, so I was wondering if it would make any sense to kind of jack up the old hybrid with say some cyclocross tires and some kind of fork like the rockshox metro. Do people ever do this, or is it a totally idiotic idea? Im not really much into to jumps or drops or anything like that, but I definitely enjoy hard climbs/descents. Would a bike so-equipped be feasible? Or should I just bite the bullet and buy a REAL mtn bike? If so Im only looking to spend 250-350 dollars- I know its low rent but I don't really mind, so long as I can ride some mountain singletrack on it- any halfway decent bikes come to mind in that price range? Oh and if anyone knows of any good road or mtn rides in the orange county area, Im listening. And also if anyone needs any good road rides in the Ithaca or Oneonta areas of upstate NY, just ask:) Whew sorry this is so long, thanks for reading.
